Simple Orange Vinaigrette Dressing
1/2 small shallot, peeled, minced (approx. 1 Tbsp) and rinsed in cold water
1 medium orange, zest (1 to 2 Tablespoons) & juice (¼ cup)
¼ cup olive or avocado oil
2 Tbsp champagne vinegar
6 Tbsp olive oil
Salt & pepper to taste
Prepare and measure ingredients as listed in the ingredient list.
Place all ingredients in a small sealable container, preferably glass.
Shake until combined.
Drizzle over salad, roasted vegetables or meats to serve.
Your dressing will keep in the refrigerator for up to one week. Shake before serving each time.
